Hot Dog Omelette

Move away from the bread heavy hot dog and instead try this tasty and light hot dog omelette.

Equipment

  • 1 Small Frying Pan Non stick is best
  • 1 Silicon spatula
  • 1 Mixing bowl
  • 1 Fork or Whisk
  • 1 Microwave
  • 1 Kitchen Paper

Ingredients
  

  • 1 Frankfurter
  • 2 medium eggs
  • 1/4 Red onion finely chopped
  • 2 tsp Frozen chopped Corinader
  • Salt and Pepper
  • Spray Oil

Instructions
 

  • Place the frying pan on a medium to high heat.
  • Wrap the frankfurter in a piece of kitchen paper and then cook in the microwave on full power for 30 seconds.
  • Add the chopped onion and coriander to the frying pan and stir around.
  • While the coriander is melting chop the frankfurter into slices and then add to the frying and mix everything together.
  • Crack the two eggs into a bowl and beat with a generous pinch of salt and pepper.
  • Pour the egg mixture into the pan and swirl the pan to ensure everything is covered in egg.
  • Cook for 2 to 3 minutes until the omelette is set but still a bit runny in the middle.
  • Slide the omelette onto a plate and enjoy.

Notes

If you want to add cheese then no problem. We recommend about 20 grams of grated cheese.
If you don't fancy the coriander flavour then simply leave it out of this recipe when you make it.
