Chicken and Bacon Omelette

- 3 Slices Chicken Ham Thick sliced pre cooked chicken
- 1 Slice Bacon We recommend Bacon Medallion
- 1 Slice Leerdammer Light Cheese
- 2 Medium Eggs
- 2 tsp Lemon Chilli Pepper
- 2 Fresh Chives
Place the frying pan on a medium to high heat and cut the chicken, cheese and bacon into strips
Put the bacon in the frying pan and cook for 2 minutes resisting the urge to stir the bacon too much so that it crisps up a bit
While the bacon is cooking, beat the two eggs in a bowl and mix i the pepper.
Add the chicken to the pan, mix the chicken and bacon together and cook for 1 minute.
Tip in the egg and mix with the chicken and bacon.
Place the cheese onto the egg and cook to your desired firmness. We recommend you still have some movement and liquid in the centre of the omelette.
Slide the cooked omelette onto a plate and decorate with the chives.
You could replace the chicken slices with leftover chicken from a roast dinner.
You could use streaky bacon rather than medallions for a crispier bacon but it will push the calories up.
