Equipment

  • 1 Crepe or Pancake Frying Pan https://amzn.to/3SxRFTs
  • 1 Cup or bowl Used for mixing the eggs
  • 1 Sharp knife For chopping the onion
  • 1 Chopping board

Ingredients
  

  • 5 Slices Chorizo Buy a packet of pre sliced chorizo for ease. They are also great on a pizza.
  • 1 Slice Leerdammer Light Cheese
  • 1/2 Red Onion
  • 2 Medium Eggs
  • 1 tsp Chilli Salt
  • 5 Sprays Spray oil

Instructions
 

  • Heat the crepe pan on a high heat. Finely chop the onion into chunks, spray the frying pan 4-5 times with the oil and add the onions and cook for 1 minute.
  • Add the chorizo and allow to cook for a minute or two. While the chorizo is cooking beat the eggs in a bowl and add the chilli salt to the egg mixture.
  • Once the oil is starting to come out of the chorizo add the egg and swirl into around the pan to ensure a good and even coverage.
  • Cut the Leerdammer cheese into slices and lay on top of the omelette. If you have a blowtorch then use it to help melt the cheese.
  • After a few minutes slide the omelette onto a plate and enjoy.
