Ingredients
  

  • 100 grams cooked and peeled prawns
  • 3 pickled gherkins
  • 20 grams sweetcorn
  • 30 grams low calorie mayonnaise
  • 15 grams low sugar tomato ketchup
  • 10 grams sliced cucmber
  • 1 spring onion finely chopped
  • 1 pinch pepper
  • 1 brioche roll

Instructions
 

  • Slice the roll in half
  • Add the mayonnaise, ketchup, sweetcorn and pepper to a bowl
  • Chop up the gherkins and add to the sauces
  • Mix the gherkins, sweetcorn and sauces together
  • Spoon a small amount of the relish onto the bottom slice of the brioche roll
  • Add the cucumber
  • Add the prawns
  • Add more relish and top with the other half of the roll

Leave out the cucumber to have a less messy time eating this zingy prawn roll.
