Use Leerdammer light cheese

How to make this Bacon and Cheese Omelette
Step 1
Place a non stick frying pan on a medium to heat heat and cut the bacon into strips. Once the bacon is cut then add to the hot pan and
leave for a minute or two before moving.
Step 2
Beat the eggs in a bowl and add the Lemon Chilli Pepper. cut the cheese into strips and stir the bacon around the pan.
Step 3
Add the egg mixture to the pan and swirl around ensuring all the bacon is covered. Using a non stick spatula gently push the edges of the omelette to avoid a thin edge that will stick to the pan. To see what I mean watch the video above.
Step 4
Add the strips of cheese to the omelette and continue to cook for a few minutes. If you have a chefs blowtorch then you can use this to help melt the cheese and cook the top of the omelette.
Step 5
The omelette cooked when it is firm but still has a soft almost runny centre. Once it looks like this simply slide it onto a plate and garnish with the chives.

Easy Bacon and Cheese Omelette
Equipment
- 1 Non-stick crepe pan
- 1 Pair of scissors
- 1 Silicon spatula
- 1 Chefs Blowtorch
Ingredients
- 2 Medium Eggs
- 1 Slice Bacon
- 1 Slice Leerdammer light cheese
- 2 Chives
- 1 tsp Lemon Chilli Pepper
Instructions
- Place the frying pan onto a medium to high heat.
- Cut the bacon and cheese into strips.
- Add the bacon to the hot pan and leave to cook on one side for two minutes.
- Beat the eggs and the pepper together in a bowl.
- Stir the bacon around the frying pan and leave for another minute.
- Add the egg mixture to the frying pan and swirl around the pan making sure to cover all the bacon. Gently push the edges of the omelette inwards to stop the edge from being two thin and sticking.
- Add the cheese strips to the omelette and allow to cook for a minute.
- Use the blow torch to help melt the cheese.
- The Bacon and Cheese Omelette is cooked when it is firm but with a soft centre. Once it reaches this consistency slide it onto a plate.
