Chorizo Omelette Recipe
This delicious Chorizo and Leerdammer Omelette Recipe is ready in under ten minutes and makes for a great tasting, low calorie and high protein lunch.
Ingredients for a Chorizo and Leerdammer Omelette
You need the following ingredients to make this tasty chorizo omelette.
- 5 slices of Chorizo
- 1 slice reduce fat Leerdammer cheese
- 2 medium eggs
- Large pinch of Chili salt
- 1/2 a red onion
- 1 calorie spray oil
Equipment required
The following equipment is useful to make this omelette recipe.
- Crepe or Pancake frying pan
- Bowl or cup to mix the eggs and salt together
- Sharp knife and chopping board
Directions to make a Chorizo and Leerdammer Omelette
Here are the steps to create this lovely Emmental and Chorizo Omelette.
Step 1
Heat the frying pan on a medium to high heat. Finely chop the onion into small chunks, add 4-5 sprays of oil to the hot pan and then add in the onions.
Step 2
Beat the eggs in a cup or bowl and add a generous pinch of the chilli salt.
Step 3
Add the chorizo slices to pan and let them cook down for one minute.
Step 4
Once you notice the red chorizo oil begin to come out of the chorizo slices then add the eggs and roll around the frying pan to ensure an even coverage.
Step 5
Cut a slice of Leerdammer light into strips and add those strips to the top of the omelette.
Step 6 (optional)
If you have a small chef blowtorch then use this to help melt the cheese and cook the top of the omelette.
Step 7
Cook the omelette for a few minutes and then slide onto a plate and enjoy.

Equipment

- 1 Cup or bowl Used for mixing the eggs
- 1 Sharp knife For chopping the onion
- 1 Chopping board
Ingredients
- 5 Slices Chorizo Buy a packet of pre sliced chorizo for ease. They are also great on a pizza.
- 1 Slice Leerdammer Light Cheese
- 1/2 Red Onion
- 2 Medium Eggs
- 1 tsp Chilli Salt
- 5 Sprays Spray oil
Instructions
- Heat the crepe pan on a high heat. Finely chop the onion into chunks, spray the frying pan 4-5 times with the oil and add the onions and cook for 1 minute.
- Add the chorizo and allow to cook for a minute or two. While the chorizo is cooking beat the eggs in a bowl and add the chilli salt to the egg mixture.
- Once the oil is starting to come out of the chorizo add the egg and swirl into around the pan to ensure a good and even coverage.
- Cut the Leerdammer cheese into slices and lay on top of the omelette. If you have a blowtorch then use it to help melt the cheese.
- After a few minutes slide the omelette onto a plate and enjoy.
